Cardamom is a spice that is most predominantly grown in India and Indonesia. It is one of the most ancient spices in the world, sometimes referred to as the queen of spices, and is also considered to be one of the most expensive spices. Known for its pleasant aroma, it was added to soups and bread and was used to freshen breath. It is one of the most common Indian spices and it features in a number of our dishes, both sweet and savory. We add it to kheer or payasam and also use it in biryanis and pulao. It is also used to flavor our beloved masala chai and its presence in Indian desserts is almost universal.
