Nixta what!!?!? Raw dried corn is boiled with lime and soaked overnight. The skin of the corn is the removed and the corn is grinded with salt to make the dough, called Masa.
Little dough balls are pressed and cooked on a cast iron pan to get that soft, fluffy tortillas.
Nixtamalization makes the corn easier to digest, enhances nutrition and adds a glorious earthy flavor which is typical of authentic corn tortillas
