Garbanzo Waffles by Dr. Nandita Shah, SHARAN

Ingredients:

  • ¼ c whole grain cornmeal (or ¼ c millet, quinoa or buckwheat flour)

  • ½ can of rinsed, drained garbanzo beans or 1/2 cup of boiled garbanzo beans

  • ½ tsp salt

  • 1 tbsp vanilla

  • 1 tbsp date paste (soak dates overnight and blend to a smooth paste)

  • 1 ¾ cups water

  • 2 cups rolled oats

Method:

Put all of the above ingredients in the blender and blend until smooth, approximately 30 seconds or until well blended.

Pour into preheated regular (not Belgian) waffle iron and bake at medium setting until waffle iron signals baking is complete. This takes under 3 minutes in Cuisinart Classic Round Waffle Maker, but can be 8-10 minutes in some other waffle irons.

Serves 4-6
